ingredients
- 1⁄2 cup quick-cooking oats
- 1⁄4 cup all-purpose flour
- 1⁄4 cup whole wheat flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 3⁄4 cup buttermilk
- 1⁄4 cup low-fat milk
- 1⁄4 cup egg substitute or 2 egg whites
- 2 tablespoons safflower oil
directions
- Beat all ingredients with hand beater or wire whisk just until smooth (for thinner pancakes stir, in additional 2-4 TBS milk.
- Spray griddle or small skillet with cooking spray; heat griddle to 375F
- For each pancake, pour slightly less than 1/4C batter onto hot griddle.
- Cook pancakes until puffed and dry around the edges.
- Turn and cook other side until golden brown.

Hi Chef Diva Divine, we had these pancakes this morning at first the batter looked really thin my Father In Law was visiting and I was nervous but then Dad said, "are these pancakes ever good and boy were they ever"! I got about 12 pancakes and we ate them all. This recipe is a keeper only difference in what we did was let the pancake batter sit for 10 minutes to soften the gluten {tip from Cook's Illustrated} and we use sunflower oil on the griddle,a full cup of buttermilk I was short on the milk, two whole eggs and I made a mistake I grab the wrong flour bag as I was rushing and used bread flour which has multi - grains and flax seeds in it but what an incredible taste very light and sweet! This recipe has gone into my Brunch cookbook many thanks for posting!
