- 1 1⁄4 cups water
- 1 cup quick oatmeal
- 1⁄2 cup oleo (or margarine)
- 1 cup sugar
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1 1⁄2 cups flour
- 1 teaspoon salt

Topping
- 2 tablespoons oleo, melted (or margarine)
- 1⁄2 cup brown sugar
- 1 1⁄2 cups chopped pecans
- 1⁄4 cup evaporated milk
- 1 teaspoon vanilla extract
directions
- Bring the water to a rolling boil and pour it over the oatmeal; let stand for 20 minutes (DO NOT DRAIN).
- Preheat oven to 350°F.
- Add the oleo and sugar, and then add the eggs and vanilla; beat well.
- Add the baking soda, flour, and salt; mix until smooth.
- Pour the batter into a 9x12 loaf pan.
- Bake at 350 F for 35-40 minutes.
- Topping:.
- Mix the ingredients together and apply to cake while hot.
- Put the cake under the broiler until the top is golden brown.

What a great way to make oatmeal, which I don't really care for. I keep trying oatmeal as oatmeal, and there have been very few I would recommend! Your's is among that small group.
