- 3 -4 ears fresh corn (organic is important to avoid genetic engineering)
- 1 tomatoes, chopped
- 1 avocado, chopped
- 1⁄2 red bell pepper, chopped
- 1⁄2 green bell pepper, chopped
- 1⁄2 cup fresh cilantro
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 pinch sea salt
- 1 pinch cumin powder
- 1 pinch chili powder
directions
- Shave the kernels off the corn cob with a sharp knife into a bowl and toss thoroughly with remaining ingredients. Refrigerate until serving.
