- 2 (200 g) packets arnott's lattice biscuits
- 225 g Philadelphia Cream Cheese
- 2 teaspoons vanilla
- 225 g butter
- 225 g sugar
- 4 teaspoons lemon juice
- 2 teaspoons gelatin, dissolved in hot water
directions
- Cream butter, cheese and sugar. Add vanilla, lemon juice and gelatine.
- Check the taste for lemon and add more accordingly.
- Line a slice tin with one layer or Lattice biscuits (glazed side down) and spread mixture over them evenly.
- Place remaining biscuits on top (glazed size up) making sure they are in line with the bottom layer of biscuits.
- Place tin in the fridge until lemon mixture sets and cut out into individual biscuits (like a sandwich).

I live on the Gold Coast which is at the very south east of Queensland in Australia. I am a nanny for 3 kids who are very fussy eaters. This website has given me heaps of recipes to try on them (most of which at least 2 of them will love and the other will hate) and with reviews allows me to not waste hours cooking just for them to say they hate it (which drive me nuts).
