- 5 large tart apples
- 7 tablespoons sugar
- 10 1⁄2 tablespoons cinnamon
- 4 large eggs
- 1 1⁄2 cups sugar
- 1⁄4 cup orange juice
- 3 teaspoons baking powder
- 1 teaspoon salt
- 3 cups flour
- 1 cup cooking oil
- 1⁄4 cup pecans (optional)
directions
- Peel and core apples and slice thinly.
- Combine apple slices with 7 tbls sugar and cinnamon.
- Mix well and set aside.
- Mix all other ingredients well, (add nuts if using).
- Pour half the batter into a well greased tube pan, cover with half the apples then add the rest of the batter and finally cover with the remaining apple slices.
- Bake in the oven at 350 for 1 hour 45 minutes.
- The cake is ready when a toothpick comes out clean.
- Cool in pan for 25 minutes.
