Hearty Chicken Stew

"I found this recipe on the back of the Carnation milk can. I have a fussy family and this is a nice meal that everyone can enjoy."

  • Combine breadcrumbs, Parmesan and butter in a bowl and set aside.
  • Heat oil in large saucepan over medium heat; cook onion about 2mins or until softened.
  • Add chicken; cook 5 minutes or until lightly browned.
  • Add potatoes mixed vegetables and seasonings.
  • Cook for 10 minutes; stirring occasionally. Stir together evaporated milk and cornstarch in a bowl.
  • Stir into vegetable mixture, bring to a boil;stirring.
  • Reduce heat to med-low; cover and cook 10 minutes (or until vegetables are tender and sauce has thickened) stirring often.
  • Pour into 8-inch baking dish, sprinkle with breadcrumb mixture.
  • Broil 5 minutes or until golden brown.

  1. This was ok However I thnk that the cream base would be great for a chicken ala king type dish. It would need more of the cream base though. I will make again as chicken ala king.

  3. This was wonderful. Instead of frozen mixed veggies, I used fresh green beans, fresh carrots, fresh celery and a can of corn. I just served it from the pot, rather than putting it in the oven with breadcrumbs.
     
  4. This was great. I was not convinced when I added the milk as it smelled soooooooo sweat. The end product was lovely .I will deff make it again. I did add a little water for the first ten minutes cooking as I felt it was very dry. This worked well.
     
  5. I have to admit, I didn\'t actually eat this dish! (YET) But, I did make it for a sick friend, and it smelled and looked wonderful! Trust me, it almost didn\'t make it to her house! I used a small bag of frozen mixed vegetables, (carrots, green beans and corn) and they worked great. As this was cooking, and the lovely smell went throughout our house, my husband was a little disapointed that I had steaks in the fridge marinating for the grill! Now that says something! So, even though the weather is warmer now I had to promise to make this for him next week! And my sick friend, LOVED IT! She said it CURED her! I asked her on a scale of 1 to 5 how much she loved it, as she isn\'t Zaar savvy, and she said 10! Thanks Nancy! :-)

I have 1 boy and 2 step daughters. 8 12 15. I have just started cooking, (other than suppers) and I love it. I like making cookies and desserts the best. I have a fussy family so I have to watch what I cook.
