ingredients
- 4 hard-boiled eggs, peeled, chopped
- 100 g shaved leg ham, chopped
- 1⁄2 cup whole egg mayonnaise
- 2 tablespoons parsley, chopped
- multi-grain cracker, to serve
directions
- Mix together all ingredients except crackers.
- Spoon into a container.
- Pack into lunch box with chiller brick.
- Pack crackers seperately.

I love ham salad, and I love egg salad, so this was delicious to me! Served with crackers, I enjoyed this as posted. The ham provided all the salt necessary. I also made a sandwich with this, and added some pickles and black pepper. Simple goodness! Next I'll try it on top of raw spinach....think it would be delicious that way. Thanks for sharing!Reply

Made this as 2 serves and used in sandwiches (though I did take a pic with it on crackers) using wholemeal/wholegrain bread and the DM and I had deliciously enjoyable lunch. Thank you katew, made for Edition 8 - Make My Recipe. UPDATE 21 Aug.'11 made up full recipe, used a thick piece of smoked ham which I finely diced, 2 tablespoons of fresh parsley but only 2 tablespoon of whole egg mayo to 4 hardboiled eggs and served as an open sandwich for myself and a toasted regular sandwich for the DM with plenty left over for the DS to take in sandwiches over the next couple of days. Delicious.Reply
