Cucumber-Dill Salad With Feta Cheese

- 2 English cucumbers
- salt
- 3 scallions
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- fresh cracked pepper
- 1 bunch dill, chopped
- 50 g feta cheese
directions
- Half the cucumbers length-wise. Remove the seeds. Slice into thin ribbons. Put in strainer with some salt and allow to drain for about 10 mins (the salt will draw out some of the moisture from the cucumber). Slice the white part of the scallions thinly. Cut the green part into very thin slivers.
- Prepare a dressing from the oil, vinegar, salt and pepper to taste. Mix the cucumber, scallions, dill, and dressing. Crumble the feta cheese over the salad and add pepper to taste.

This was fantastic! I made this during my lunch hour and let it sit, sans feta cheese, all afternoon and marinate in the white wine vinegar. I tried to cut the cucumbers into thin slices and then realized after a few minutes that it was just easier to use my vegetable peeler to cut the cucumber. It made it nice and thin so it could soak up the juices. Feta cheese definitely compliments the dill. We will definitely be making this again - thanks for posting! Made for PAC Spring 2008.
