Chicken and Stuffing Casserole

  • Preheat oven to 350 degrees.
  • Melt butter in a 13x9 pan.
  • Sprinkle with 3/4 of the package of dry stuffing mix.
  • Evenly sprinkle chicken over stuffing.
  • Mix sour cream, chicken broth, cream of chicken soup and the seasonings from stuffing mix.
  • Pour evenly over chicken.
  • Sprinkle with remaining dry stuffing mix.
  • Bake for 1 hour, uncovered.

  1. Overall we enjoyed this. I had some trouble finding the right ingredients. I could not find the right stuffing so I used a box of Garlic and herb instead. Also, this box of stuffing did not have a seperate packet with seasoning. Other than that, I didn't have any problems. However, when I was making this, I couldn't figure out why I needed to cook the chicken first - it's supposed to be in the oven for an hour, that should be enough time to cook it, right? Well, after cooking it I understand now. Instead of being a casserole that has a liquid goopey center, it kind of...solidifies with the stuffing - and if the chicken isn't cooked it might contribute juices that would make it all too mushy.   2. This is a very delicious meal. I found it while looking for something easy to cook without a lot of ingredients and I'm glad I found this recipe. I changed a few things up. I used a 16 OZ package of Stuffing that already had seasonings mixed. I cooked and cubed 3 chicken breasts. I added onions and one clove garlic and of course salt and pepper and I sprinkled shredded cheese on the top of the casserole and wow! This casserole is amazing. I served it with carrots on the side..

  3. This is a great casserole that is extremely easy and very tasty. I had the neighbors over and everyone loved it. It reminded us of Thanksgiving without all the work. The stuffing mix is a nice touch. I would recommend this dish to everyone. Thanks for sharing, Michelle S.
     
  4. I didn't have whole chicken breasts, but did have cooked, chopped up chicken in the freezer so I had to guess at the amount to use. The Stovetop Long Grain & Wild Rice Flavor at the store was 6 ounces, so that is what I used. A nice casserole dish that was easy to make.

Michelle, I purchased stuffing mix especially to make this recipe, but when I open the box, I found that the bread crumbs and seasoning mix were all combined in one package, also I only had 1 can each of cream of mushroom and cream of chicken, so that is what I used, and this is what I did... I doubled the complete recipe, but sauteed onions, celery and garlic first in butter, then topped the veggies with one package of stuffing mix, then I poured the sour cream soup mixture over the stuffing then topped it with the other package of stuffing mix. Also I used leftover meatballs in place of the chicken breast which I stuck on top of the casserole. This recipe couldn't have been more easier to put together, and so delicious! I will definately make this again, next time with the proper stuffing mix LOL!...thanks for sharing a great recipe!...Kitten:)
