Braised Kale With Corn

- 2 tablespoons olive oil
- 1 bunch kale, washed stemmed and roughly chopped
- salt and pepper
- crushed red pepper flakes
- 6 garlic cloves, finely chopped
- 2 cups chicken stock
- 1⁄2 lemon, juice of
- 1 small onion, thinly sliced
- 1 (10 ounce) package frozen corn, defrosted
directions
- Heat a large deep skillet over medium heat, add oil and onion cook stirring occasionally for 2 minutes. Add garlic and crushed red pepper flakes. Cook stirring occasionally for 1 minute. Add kale, corn, stock and salt and pepper to taste. Cook stirring occasionally for 10 minutes. Add lemon juice, stir and cook 1 more minute.
