Blueberry Muffins (no Refined Sugar)

"I haven’t tried these yet but they look great. There are no refined sweeteners, only orange juice, and I’m sure they would be good with whole wheat flour too."

  • Combine dry ingredients; toss the blueberries with about 2 tablespoons dry mixture and set aside.
  • In separate bowl, blend eggs, oil, orange juice, and orange zest.
  • Make well in dry ingredients and add egg mixture; stir gently, and when only partially combined, add blueberries.
  • Fold ingredients together just until moistened (do not overmix).
  • Divide batter into 12 well-greased muffin tins and bake at 400 degrees for 20-25 minutes, or until lightly golden; cool briefly on wire rack, remove from pan, and serve warm with butter.

  1. I was somewhat disappointed with this recipe. I guess I should have realized that with no sugar....they wouldn't be sweet! I guess I thought the orange juice would do the trick, but these had really no sweetness to them at all. I personally thought they were okay and my 2-year old ate one, but my husband and my four year old were not impressed. Oh well! They were worth a try but next time I think I'll make "regular" blueberry muffins.
     
  2. These muffins are great!! I loved the fact that there was no refined sugar and so little oil. I just used whole wheat flour and omitted the orange zest because I didnt have any. They came out moist and absolutely delicous! I will definately make them again! Thanks messy cook!
     
  3. These were very good considering there is no sugar in them an not that much oil either. Light and fluffy. I found the allspice a little overpowering and would probably reduce the amount to 1/4tsp and up the cinnamon to 1/2tsp instead. I left out the orange zest because I didn't have a fresh orange for grating. Thanks for sharing and I will be making them again when I want a not so sinful treat! :)
     
  4. Wow! I could NOT believe how tasty these muffins were! I couldn't believe that something with no refined sugar could taste that good! The orange in this recipe makes it! I am very happy now that I can eat blueberry muffins and not feel guilty. Next time I may even try the whole wheat flour instead of white! Thank you so much :)
