- 500 g bananas, mashed
- 1 teaspoon lemon juice
- 100 g flour
- 62 1⁄2 g brown sugar
- 1⁄2 teaspoon salt
- 280 ml coconut milk
- 2 tablespoons desiccated coconut
directions
- Mix all ingredients together.
- Beat well to remove any lumps.
- Heat small amount of oil in frying pan.
- Cook pancakes until golden brown on both sides.
