ingredients
- 1 1⁄3 cups skim milk
- 1⁄2 cup Egg Beaters egg substitute
- 1 tablespoon vegetable oil
- 1 teaspoon vanilla
- 3⁄4 cup banana, ripe
- 1 1⁄2 cups Multi-Bran Chex
- 1 cup all-purpose flour
- 3 tablespoons Splenda sugar substitute
- 1 teaspoon baking powder
- 1⁄2 teaspoon baking soda
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon ground nutmeg
directions
- In blender, process milk, eggs, oil, vanilla, and banana just to mix.
- Add bran cereal, process, add remaining ingredients.
- Process to combine, scrape sides of container.
- Let stand 5 minutes.
- Stir.
- Bake on preheated, lightly greased griddle over medium heat.
- Pour batter to form pancakes, cook.

Wonderful recipe! I halved the recipe and used 1 real egg, otherwise made as directed. These pancakes were light and fluffy with great flavor. Instead of sugar-free syrup, I mashed up a handful of blueberries, mixed with just a little syrup, and warmed it in the microwave. Just loved this delicious breakfast - thanks for sharing the recipe!

As promised I made this today. It is great. You sent it just in time. I hade ripe bananas that would have ended up in the garbage. I will pass this on to the nursing home I volunteer at if you don't mind. They have quite a few patients who are diabetic, and anyone diabetic or not would enjoy these.
