- 3 eggs
- 2 cups sugar
- 1 cup canola oil
- 1 teaspoon vanilla extract
- 2 cups zucchini, shredded
- 2 cups flour
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1⁄4 teaspoon baking powder
- 1 cup walnuts
directions
- Preheat oven to 350 degrees.
- Beat 3 eggs until frothy.
- Beat together sugar, oil and vanilla until thick and lemon colored.
- Stir in the zucchini.
- Mix together and add flour, cinnamon, baking soda, salt and baking powder.
- Fold in walnuts.
- Pour into 2 oiled and floured loaf pans and bake for one hour.
