Zesty Peanut Soup

"I'm not entirely sure where this recipe came from. It's been a newspaper cutout in the back of Mom's recipe book for years, anyway, and it's definitely one of our favorite soups. It's quick, easy, and very delicious! Hint: It's also better if it sits a little while before being devoured uncontrollably."

  • Sauté onion, garlic and red pepper in olive oil until soft, about 5 minutes.
  • Add vegetable broth, water, tomatoes, rice, red pepper flakes, salt, and pepper and bring to a boil.
  • Simmer for 45 minutes.
  • Whisk in peanut butter.
  • Enjoy!

  1. Yumm-my vegan soup! It's actually more like stew, it's so thick :-) Say goodbye to the same-old lentil vegetable bowl- this is different and delicious. It was hotter than I expected, even though I didn't add any extra red pepper flakes. (I might, however, have added an extra garlic clove!!) We also let it sit about 40 minutes before eating. Next time, we may cut back on the pepper flakes, but altogether this was a success! Even with my dad, who wasn't sure about it at first. My recommendations? Use crunchy peanut butter and serve with freshly baked bread. Thanks so much for posting! :-)
     
  2. over all it was just okay, i couldnt not think it was missing something. giving the time for the flavours to blend after adding the peanut butter did help, but i still found it a bit bland . i also would like some extra veg in it, maybe spinach, shredded carrots perhabs? some cooked chicken breast would probably taste good as well. as for the flavouring( spices) i havent quite figured out what to add yet .
