Zesty Herbed Potato Wedges for Grill or Stove Top

  • Prepare grill for indirect-heat cooking.
  • Meanwhile, place potatoes in large microwave-safe bowl.
  • Toss with 1 tablespoon oil and 1/4 teaspoon salt. Cover bowl.
  • Microwave on HIGH, stirring occasionally, until just tender, 8-10 minutes.
  • TO FINISH ON GRILL:

  • Add onion wedges to potatoes; toss to coat with oil.
  • Grill potatoes and onion over indirect heat, covered, turning once, until browned and cooked through, 6-8 minutes.
  • In large bowl, combine remaining 1 Tablespoon oil with vinegar, parsley, zest, paprika and remaining 1/4 teaspoon salt.
  • Add potatoes and onion; toss gently to coat.
  • TO FINISH ON STOVE:

  • Microwave potatoes as directed in steps 1-3.
  • In large nonstick skillet, in additional 1 teaspoon oil, cook onion over medium heat, turning occasionally, until almost tender, 5 minutes.
  • Add potatoes; cook, turning once, until lightly browned, 3-5 minutes.

  1. I thought I would really enjoy these potatoes, but I found them to be too similar to many I have tried. I thought the lemon would give it a bit more, but the balsamic took away any of the tart for me. I think a little rosemary may have helped.

  5. Very flavorful potato dish. I also used a touch of lemon instead of the peel and used regular balsamic vinegar. I finished mine off on the grill. I cut the recipe in half and we truly enjoyed it with our dinner. The onions had a nice sweet tart taste and the potatoes came out nice and tender yet held their sharp. Thanks for posting a delicious recipe. This one is going in my top 2009 cookbook. :)

  1. I thought these were really good! My girls think they taste similar to German potatoes. I used the stovetop, though I'm sure they would've been really nice on the grill as well. I used lemon juice instead of lemon peel and regular balsamic vinegar instead of white. Very tasty and we all love them. Thanks!
