S-C-R-A-M (Salsa, Cheese, Rice and Meat)

"Based on the AJC online edition's What's For Dinner featured on 08-05-09 -- 5 ingredients / 30 Minute Challenge! recipe submitted by Matt Doroff, Norcross, Georgia, with some OPTIONAL ingredients. A great one-pot, family friendly meal with an even better kid-approved acronym, SCRAM :) (Salsa, Cheese, Rice and Meat). This is convenience cooking at its best, a ground meat skillet dinner using salsa and taco seasoning for flavor and cooked rice (and optional black beans) to add heft... If you don't have cooked rice on hand, one (8.8-ounce) package brown or white cooked Ready Rice (90 second microwaveable) can be used. To keep this more kid-friendly, leave out the chopped jalapenos! Leftovers can be rolled up in a tortilla for a burrito filling - or plan on using tortillas as part of your SCRAM meal!"

This was delicious and oh so easy to assemble. I had everything on hand, except the black beans. which I would have omitted anyway. Instead i added a can of corn. For some added crunch, I served crushed Nacho Doritos on the side. :)

Thank you for suggesting this recipe. Was going to make it for someone else and decided my family needed to try it first...It was a hit. I added a Hot taco seasoning since we do like spicey and the black beans was some I found that were Tex-Mex black beans and added a little more cheese. Will definitely be making this again. My son's fiancee was here and she asked for the recipe. Again, thank you.

I made this on 2/13/10 for the " 8th Annual Photo Swap " and for mine and SO's dinner. I did have to cook my rice, and you were " right on the money " about the extra 20 minutes. :). Since it was just myself and SO, the recipe was halved.Instead of chedder a blend of six Mexican Cheeses was used. For my portion, I placed some of the S-C-R-A-M over tortilla chips, topped with a bit of sour cream and green onions. Then sprinkled a bit more cheese over the top, It was quick to make and tasted pretty good. Thanks for posting and, " Keep Smiling :) "

AWESOME! We love beans and rice and the addition of the cheese and meat (I used ground buffalo) was wonderful. Great combination of flavors ~ I added the beans and the jalapenos ~ also had to pre-cook my brown rice, but certainly worth the extra time it took. Thanks so much KuW for this recipe ~ we will use the leftovers for brunch today after church. Made for PAC FALL 2009!

Easy and wonderfully delicious! I served it over tortilla chips yet forgot the sour cream. I will remember when using up the leftovers. I used brown rice. I cooked that in microwave while getting everything else chopped, measured etc. Definetly will make this one again.
