- 1 lb extra lean ground beef (or ground turkey breast, or ground pork)
- 1⁄2 cup onion, chopped (Optional, if desired)
- 1 (1 ounce) package taco seasoning
- 2 cups cooked rice (or one 8.8-ounce package 90 second microwaveable rice)
- 1 1⁄2 cups sharp cheddar cheese, shredded (or pepper jack cheese)
- 1 1⁄2 - 2 cups salsa
- 1 (15 1/2 ounce) can black beans (rinsed and drained, if desired) (optional)
- 1 tablespoon pickled jalapeno chili, chopped (Optional, if desired)
- avocado, sliced (Optional, for garnish)
- cilantro (Optional, for garnish)
- sour cream (Optional, for garnish)
- 4 -8 tortillas (Optional, for garnish)
directions
- In a large skillet, saute chopped onion (optional) until translucent ~.
- Add ground meat and brown with taco seasoning, draining excess fat if necessary.
- Add cooked rice, cheese, salsa, (and optional black beans and jalapenos) to taste. NOTE: Use the full 2 cups salsa if you are adding the black beans!
- Stir until combined and heated through.
- Serves 6-8 ~ Garnish with cilantro, sour cream., and sliced avocados.
- Any leftovers can be used as a filling for tortillas.
- NOTE: Allow twenty (20) extra minutes if you need to precook plain old fashioned raw rice for this meal!

Thank you for suggesting this recipe. Was going to make it for someone else and decided my family needed to try it first...It was a hit. I added a Hot taco seasoning since we do like spicey and the black beans was some I found that were Tex-Mex black beans and added a little more cheese. Will definitely be making this again. My son's fiancee was here and she asked for the recipe. Again, thank you.

I made this on 2/13/10 for the " 8th Annual Photo Swap " and for mine and SO's dinner. I did have to cook my rice, and you were " right on the money " about the extra 20 minutes. :). Since it was just myself and SO, the recipe was halved.Instead of chedder a blend of six Mexican Cheeses was used. For my portion, I placed some of the S-C-R-A-M over tortilla chips, topped with a bit of sour cream and green onions. Then sprinkled a bit more cheese over the top, It was quick to make and tasted pretty good. Thanks for posting and, " Keep Smiling :) "

AWESOME! We love beans and rice and the addition of the cheese and meat (I used ground buffalo) was wonderful. Great combination of flavors ~ I added the beans and the jalapenos ~ also had to pre-cook my brown rice, but certainly worth the extra time it took. Thanks so much KuW for this recipe ~ we will use the leftovers for brunch today after church. Made for PAC FALL 2009!
