- 2 tablespoons butter
- 1 large diced green pepper
- 2 sliced celery ribs
- 1 medium onion, chopped
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon garlic powder
- 1⁄8 teaspoon cayenne pepper
- 1 1⁄2 cups tomato juice
- 1 tablespoon cornstarch
- 1 lb large shrimp
- 4 cups hot cooked rice
directions
- Heat butter, green pepper, celery, onion, oregano, garlic powder, & cayenne pepper until veggies are crisp.
- Add tomato juice. Heat to boil. Simmer for 5 minute.
- Mix cornstarch & 1/2 cup tomato juice until smooth.
- Add mixture & shrimp to vegetables. Cook till mixture boils, thickens, & shrimp turns pink. Let simmer 1 hour.
- Serve over rice.
