Ww Southwestern Frittata

"Fun and easy 15 minute dish. Each serving is only 4 pts. This recipe was suggested to me by a friend. I have not tried it but it sounds good."

  • Heat the olive oil in a medium sized skillet.
  • In a small bowl, beat the eggs and whites, salt, and pepper. Saute the onion and bell peppers about 5 minutes. Slowly pour the mixture from the bowl into the skillet and sprinkle with cheese.
  • Gently stir until the mixture becomes slightly firm (about 3-5 minutes). Then turn over the frittata and cook the other side about 2 minutes longer.
  • After taking the frittata from the skillet, cut it in half, and roll it like a burrito. Serve with salsa.
