- 2 tablespoons reduced-calorie margarine
- 3 medium onions, diced
- 1 lb 90% lean ground beef
- 1 garlic clove, minced
- 1 teaspoon table salt
- 1⁄2 teaspoon black pepper
- 1⁄2 lb frozen mixed vegetables
- 1 cup red wine
- 1⁄2 teaspoon dried basil
- 1⁄4 teaspoon thyme
- 3 cups beef broth
- 1 (28 ounce) can diced tomatoes
- 1 medium potato, peeled and diced
- 1 cup diced celery
- 1 cup diced carrot
directions
- In a large soup pot, melt margarine. Saute onion until it is soft and translucent, 3-5 minutes. Add garlic and saute 1 minute until fragrant. Add beef and saute, breaking up chunks with a wooden spoon, until all the pinkness is gone. Add remaining ingredients and simmer, covered, 1 hour. Season with salt and pepper to taste.

After a Walt Disney World trip in Dec 2006 where I had to rent an electric scooter because I couldn't manage the walking, I decided to have gastric bypass surgery, which was done Feb 28, 2007.
