Wild Rice and Mushrooms (Lower Fat/Calorie)

This is my mother's recipe. It is a healthier alternative to some of the other cream based recipes that are so popular. It matches well with grilled chicken and a garden salad.

Ingredients Nutrition

  • 1 box uncle ben's long grain and wild rice blend
  • 1 cup white rice (Brown Rice Works Well Also)
  • 1 lb sausage (Pork or Turkey, Mild or Hot)
  • 12 cup onion (diced)
  • 1 tablespoon olive oil
  • 12 cup sliced mushrooms (canned or fresh, it doesn't matter-if using fresh, saute with the onions from the beginning)
  • salt and pepper (To Taste)


  1. Prepare wild rice as directed on box (it will take 35-40 to cook).
  2. While wild rice is cooking, saute onions in olive oil until almost tender
  3. Add sausage and mushrooms to onions, browning sausage.
  4. Cook white rice as directed on box.
  5. When both rice mixtures are fully cooked, mix all ingredients together.
  6. Salt and pepper to taste.
