- 2 cups cannellini beans
- 12 ounces stewed tomatoes
- 3 cups vegetable broth (or beef broth if not needing it to be vegetarian)
- 1⁄2 onion, diced
- 1⁄2 cup carrot, diced
- 2 tablespoons garlic, minced
- 1 teaspoon rosemary
- 1 tablespoon parsley
- 1 teaspoon thyme
- 2 cups fresh spinach
- shell pasta
directions
- Combine the cannellini beans and tomatoes in a greased slow cooker insert. Add the broth, onion, carrots, garlic, rosemary, parsley and thyme to the insert. Cover and cook for four hours on high.
- Add the spinach; continue cooking for 10 minutes. Boil the small shell pasta until shells are al dente.
- Add pasta to serving dish, pour soup over.
