Vanilla "pound" Cake That Won't Add Pounds

- cooking spray
- 1 1⁄4 cups fat free egg substitute
- 2 teaspoons vanilla extract
- 1 teaspoon almond extract
- 8 ounces fat free cream cheese
- 4 tablespoons light butter
- 1 1⁄4 cups sugar
- 1⁄4 teaspoon table salt
- 2 cups all-purpose flour
directions
- Preheat oven to 325. Lightly coat a 9-inch loaf pan with cooking spray.
- In a medium bowl, whisk together egg substitute, vanilla extract and almond extract.
- In a large mixing bowl, beat together cream cheese and butter until well blended. Beat in sugar and salt until blended. In thirds, alternately beat in flour and egg mixture, beginning and ending with flour.
- Pour batter into prepared loaf pan and bake until a wooden toothpick inserted in center of cake comes out clean, about 1 hour.
- Cool cake in pan on a wire rack. Cut into 12 slices and serve.

Good flavor and nice texture. I used reduced fat cream cheese as I had some to use up. The other change I made was to use 1 Tbs of sugar and to make up the 1/2 cup ask for (I made a half recipe) with Splenda. I have discovered that I'm really not in love with the low fat cream cheese and I think from now on I'll skip cream cheese recipes or bite the bullet and use the real stuff as I use it so seldom anyway. I used contoured muffin molds and they made the cutest little cakes. 6 of them, just right for me. Thank you toni.
