Unstuffed 'stuffed' Cabbage

MEATBALLS
- 1 lb ground beef
- 2 eggs
- 1 cup cooked rice
- 1 tablespoon sugar
- 1 dash cinnamon
- 1 dash allspice
- salt and pepper, to taste

SAUCE
- 1 medium chopped onion
- 2 (8 ounce) cans tomato sauce
- water
- 1 (14 1/2 ounce) can sauerkraut
- 3 tablespoons brown sugar
- 3⁄4 cup raisins
- 1 small cabbage

MEATBALLS:
- Mix ground beef with eggs, rice and 1 tablespoon sugar; season with cinnamon, allspice, salt and pepper.
- Form into balls.

SAUCE:
- Saute chopped onion in oil until golden.
- Add tomato sauce, 1 can of water, sauerkraut with its juice, brown sugar and raisins.
- Heat this mixture and taste- it should be sweet and sour.

CASSEROLE:
- Shred cabbage, or cut into thin strips (eliminate any hard, veined parts).
- Pour some of sauce on bottom of roasting pan.
- Layer half of shredded cabbage over sauce.
- Place meat balls on top of cabbage.
- Cover with remaining cabbage, and pour on remaining sauce.
- Cover pan with lid or foil.
- Bake at 325 degrees for 1 1/2 hours.
- Lower heat to 275 degrees and bake for another hour.

I LOVE to cook and eat and read cookbooks. My kitchen really does overfloweth with them and of course this has quickly become my favorite cooking site! I live with my husband in a small town in eastern Connecticut. We are both retired. My children are all grown and have families of their own now. Our 3 grandchildren and 1 great-granddaughter all live in Florida and it goes without saying that we miss them very much, so when my husband retired last year we celebrated by buying a small RV! We so enjoyed driving it to Florida to spend the holidays with the little ones. Although COVID has prevented us from repeating the trip this year, I am enjoying learning new recipes to make in our RV for next year. I think the Instant Pot and the Crock Pot will be my new best friends while traveling!
