I love Tzimmes, always in for a new "twist" on this age-old recipe. This is my latest variation.
- 10 large carrots, cut in slices
- 354.88 ml dried pitted prunes
- 591.47 ml orange juice
- 78.07 ml sugar
- 1 lemon, zest of
- 4.92 ml fresh grated ginger
- Put carrots and prune in a pot.
- Add orange juice.
- Boil for 10 minutes.
- Stir in sugar.
- Simmer gently for 2 hours until liquid is almost absorbed.
- Sprinkle with lemon and ginger.
