Turnip Soup

"I got this recipe from the Heritage Quilters. Boy was I surprised to find out this delicious soup had turnips as one of the main ingredients. I am one of the first people to turn my nose up at turnips but this soup will surprise you."

  • Place turnips, potatoes, and onions in saucepan.
  • Cover with small amount of water and simmer until tender; drain.
  • Mash with potato masher.
  • Add butter.
  • Mix flour with 1/4 cup milk.
  • Add to mixture and blend well.
  • Add chicken stock.
  • Mix thoroughly.
  • Return to heat and bring to a boil.
  • remove from heat and add remaining 3/4 cup milk.
  • Reheat to serving temperature taking care not to boil.
  • Garnish with your choice of parsley, bacon or croutons.

  1. Let's start by saying that I don't like turnips, but I had some that needed to be used, so I tried this soup recipe. It was surprisingly good, rather like a light potato soup. I would recommend this to anyone who likes turnips. It's also very easy.
     
  2. Very lovely. I think it tasted wonderful. I put bacon and dried parsley on it. I think it's especially good since I'm trying to diet, and it's only 86 calories (that is, if the nutritional facts on the left are correct)
     
  3. I am the only one in my family that likes trunips so I was a little surprised that my family liked it enough to have a 2nd bowl. It is easy to prepare and I used the suggested topping ingredients, croutons, crumbled bacon and parsley. My soup didn't thicken like I thought it would so next time I would add a little more flour. Thanks Kaykwilts. Bullwinkle.
     
  4. I made this soup only because we had several turnips that needed using (Japanese turnips which are smaller and white, with a mild radish flavour). I added a bit of bacon, and think the soup would have been very bland without it. Normal turnips would probably have provided a lot more flavour. Nonetheless, unless you really love the flavour of turnips I would still only use this recipe so I didn't waste healthy veges.
