Turkey Kebabs With Asian Peanut Sauce

  • Cut up turkey cutlets into large pieces (big enough to fit onto skewers) and place in a medium size glass dish.
  • Puree garlic, ginger, lime juice, soy sauce, Dijon mustard, oil, chives and 1/2 tsp hot sauce until well blended.
  • Pour marinade over turkey and coat thoroughly. Cover and marinate 1-2 hours in the refrigerator, tossing occasionally.
  • Thread turkey pieces and cut up vegetables alternately onto skewers. Discard remaining marinade.
  • Grill until turkey is cooked.
  • In food processor, blend all peanut sauce ingredients until smooth and blended. Store in airtight container at room temperature until ready to serve.
  • Pour some sauce over the turkey skewers and serve in a side dish for dipping.
