- 1 1⁄2 lbs turkey cutlets
- 1 whole green pepper, cut into pieces
- 1 whole red pepper, cut into pieces
- 1 zucchini, cut into pieces
- 1 onion, cut into pieces
- 2 tablespoons minced garlic
- 1 tablespoon ground ginger
- 2 tablespoons chopped chives
- 2 tablespoons soy sauce
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- 1⁄2 teaspoon hot sauce

Asian Peanut Sauce
- 1⁄3 cup beef broth
- 1⁄2 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons garlic, minced
- 2 tablespoons ground ginger
- 2 tablespoons sugar or 2 tablespoons Splenda sugar substitute
- 2 tablespoons red wine vinegar
- 1 teaspoon hot sauce
directions
- Cut up turkey cutlets into large pieces (big enough to fit onto skewers) and place in a medium size glass dish.
- Puree garlic, ginger, lime juice, soy sauce, Dijon mustard, oil, chives and 1/2 tsp hot sauce until well blended.
- Pour marinade over turkey and coat thoroughly. Cover and marinate 1-2 hours in the refrigerator, tossing occasionally.
- Thread turkey pieces and cut up vegetables alternately onto skewers. Discard remaining marinade.
- Grill until turkey is cooked.
- In food processor, blend all peanut sauce ingredients until smooth and blended. Store in airtight container at room temperature until ready to serve.
- Pour some sauce over the turkey skewers and serve in a side dish for dipping.
