- 1 teaspoon canola oil
- 1 large onion, chopped
- 2 medium garlic cloves, minced
- 2 cups baby carrots
- 1 lb lean ground turkey
- 2 tablespoons chili powder
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 2 medium tomatoes, chopped
- 1 cup canned tomato sauce
- 1 vegetable bouillon cube
- 1 cup water
- 1 1⁄2 cups kidney beans, rinsed and drained
- 1 medium green pepper, chopped
- 1⁄2 teaspoon table salt (to taste)
- 1⁄8 teaspoon black pepper (to taste)
- 1⁄4 cup scallion, chopped for garnish
directions
- Coat a large with cooking spray, place over medium heat.
- Add the oil and onion.
- Saute until soft. Add garlic and carrots,
- Saute until garlic is soft.
- Add turkey, and brown it.
- Add chili powder, paprika, cumin, tomatoes, tomato sauce, bouillion, water, beans and green pepper; bring to a boil.
- Cover, reduce heat and simmer for 30 to 45 minutes.
- Season with salt and pepper,and garnish with scallions.
