Tuna and White Bean Salad

Ingredients:

Servings: 4

• 1 (19 ounce) can cannellini beans (white kidney beans)
• 1 (7 1/2 ounce) can tuna, water packed, drained
• 2 cups tomatoes, diced
• 1/2 cup red onion, minced
• 2 tablespoons basil, fresh, chopped (or mint leaves)
• 1 tablespoon olive oil
• 2 teaspoons red wine vinegar
• 2 teaspoons lemon juice
• 1 teaspoon sugar
• 1 garlic, minced
• 1/2 teaspoon Dijon mustard
• 1/4 teaspoon salt
• 1/4 teaspoon black pepper

Directions:

1. In a large bowl, combine beans, tuna, tomatoes, red onions and basil. Stir gently to avoid smashing the beans.
2. In a small bowl, whisk together olive oil, vinegar, lemon juice, sugar, garlic, mustard, salt and pepper. Pour dressing over salad and mix well.
