- 1 stalk lemongrass (whack it to soften with back of knife, and then cross slice thinly)
- 2 -4 thai dragon chilies, chopped finely
- 1 -2 inch ginger or 1 -2 inch galangal, chopped into matchsticks
- 4 green onions (chop the tops finely and use them at the beginning, chop the bottoms and use at the end.)
- 2 tablespoons olive oil
- 1 (12 ounce) can coconut milk
- 1⁄2 1/2 lb fish fillets or 1/2 lb tofu
- 1 jalapeno, thinly sliced
- 2 -3 cups water or 2 -3 cups chicken broth
- 1 1⁄2 cups sliced mushrooms
- 1 -2 sliced tomatoes
- 1 cup sliced carrot
- 7 basil leaves (torn up)
- 1 tablespoon salt
- 1 tablespoon fish sauce
- 1 lime, juiced
directions
- Fry the lemongrass, ginger/galangal, chilis and green onion tops in the oil until they make your eyes hurt.
- Add the coconut milk, once it simmers, add protein of your choice and jalapenos. Add broth if needed.
- When it simmers, add the veggies, then the basil and salt (to taste). Turn off the heat.
- Stir in fish sauce and lime juice.
