- Melt butter or margarine in non-stick skillet.
- Add onions and carrots (if desired), and fry until onions are transparent and carrots are crisp.(About 5 minutes).
- Add peas and cook for 1 minute more.
- Push veggies to one side and scramble eggs in empty side of skillet.
- Add soy sauce.
- Spoon in rice and mix until well blended.
- Fry until steamy and serve.

I made it for PAC Spring 2007 and I loved it. Very tasty and easy! I didn't use any carrots cause I didn't have any and I used a little red bell pepper and 2-3 mushrooms to clean up the fridge. Next time I'll use the carrots, to get a more colourful dish. Thanks for sharing this easy and tasty recipe!
