ingredients
- 2 boiled chicken breasts
- 10 -15 corn tortillas, cut into strips
- 1 tablespoon garlic powder or 1 tablespoon minced garlic
- 1⁄2 onion, chopped
- 1 (16 ounce) can stewed tomatoes
- 1 (16 ounce) can rotel
- 1 tablespoon cumin
- 3 (16 ounce) cans chicken broth
directions
- Boil chicken breast when done shred.
- Cut totillia's into strips.
- Mix remaining ingrediants.
- Cook in stew pot for 45 minutes.
- Serve with avacado and chedder cheese.
- Enjoy.

Although we really enjoyed the soup that I made, some of the ingredient amounts that I used were a bit different ~ I cut the recipe pretty much in half but used 6 corn tortillas, only about 4 ounces of the rotel & but a teaspoon of cumin! It was served it with some sharp cheddar! Thanks for sharing the recipe! [Tagged, made & reviewed for one of my adopted chefs in the current Pick A Chef]
