Tomato Sauce With Heavy Cream

"Good on fresh pasta, or dry, with chicken. Adapted from Marcella Hazan."

• Serves: 6

ingredients

• 4 tablespoons butter
• 1 tablespoon vegetable oil
• 3 tablespoons finely chopped onions
• 3 tablespoons finely chopped carrots
• 3 tablespoons finely chopped celery
• 2 1⁄2 cups prepared canned tomatoes
• salt
• pepper
• 1⁄2 cup heavy cream, warmed

directions

1. Sauté vegetables in oil and butter till soft and lightly golden.
2. Add tomatoes. Season lightly.
3. Simmer 20 minutes.
4. At serving time, stir in cream, and simmer 1 minute.
