- 4 tablespoons butter
- 1 tablespoon vegetable oil
- 3 tablespoons finely chopped onions
- 3 tablespoons finely chopped carrots
- 3 tablespoons finely chopped celery
- 2 1⁄2 cups prepared canned tomatoes
- salt
- pepper
- 1⁄2 cup heavy cream, warmed
directions
- Sauté vegetables in oil and butter till soft and lightly golden.
- Add tomatoes. Season lightly.
- Simmer 20 minutes.
- At serving time, stir in cream, and simmer 1 minute.
