The Perfect Grilled Cheese Sandwich

1 sandwich
ingredients
- 2 slices white bread
- 1 slice mild cheddar cheese
- 1 slice provolone cheese
- 1 dash garlic salt, to taste (optional)
- 1 tablespoon mayonnaise
directions
- Bring non-stick skillet to medium heat.
- Spread mayo on one side of each piece of bread.
- Place one piece of bread onto heated skillet, mayo side down.
- Layer your two pieces of cheese.
- Sprinkle a dash of garlic salt to taste (optional).
- Top with remaining piece of bread, mayo side up.
- Cook until golden brown on both sides.
- Enjoy!

Titles like "Perfect," "Ultimate," or "Best" should not be used for something like this that is personal preference. As one who likes a very crunchy texture, there are three things I would do differently here. First, I toast the INSIDE side of the bread under my oven broiler, then build the sandwich. Secondly, I prefer to melt the butter (or whatever you are using) in the skillet or on the griddle rather than spreading it on the cold side of the bread first. (I saved at least one marriage with this advice). The third thing I see here that I think is a mistake is in the photos. I see photos with the sandwich (or at least half of it) laying on it's side on the plate. That create's condensation that makes the bottom side soggy. I prefer to immediately cut the sandwhich in half diagonally, and then stand the halves up on the cut side to protect the grilled sides from condensation against a plate or other surface. Those are my preference. I won't claim that they are best, perfect, ultimate, or any other superlative. Just what I like.

I made two for the DM and I and used wholemeal/wholegrain bread (can't remember when I last had white bread in the house) and as I was cooking them in the sandwich press I put the mayo on the inside and for the cheese I used a cheddar and a jarlsberg as that is what I had and we loved that gooy cheesy toastie, thank you Jenni Girl made for PARTY game.
