Thai Rice Noodles With Chicken and Asparagus

"Oooooooh this is good! My husband said he now has no reason to leave me for an asian woman. Thanks alot!! I got this off of a rice noodle box. I like spicy food so its not too spicy for me but it does have chili sauce in it and also, I used salt instead of fish sauce."

  • Pour noodles into bowl and cover with VERY HOT tap water. Soak for 15-20 minutes.
  • Heat oil in large skillet over medium-high heat.
  • Add garlic and stir fry until golden.
  • Add fish sauce or salt and chicken.
  • Stir fry until done.
  • Add soy sauce, chili pepper sauce, and brown sugar. Mix until sugar is dissolved.
  • Drain noodles and add to skillet along with asparagus.
  • Stir fry noodles until firm but tender.
  • Serve and enjoy!

Thank you for posting. *I tripled the sauce only using 1/2 T. of fish sauce (Red Boat) and 1/2 t. salt. Used 1/2 lb ground turkey (needed to use it up) and added in some sliced onion. I can’t wait to try this using chicken. I can see many variations of this!

  1. this is truly a no-fail recipe. i wanted to try it be/c i had some rice noodles taking up space in my panty and because of its awesome reviews. i didn't have chicken or asparagus, or chili-garlic sauce/sambal oelek and this thing still turned out well. i replaced the chicken with shrimp and replaced the asparagus with peas. i used ketchup and chili flakes in place of the chili-garlic sauce. this is seriously so yummy! i can't wait to try the "real deal" when i have all of the ingredients!

  3. The sauce was good not great...I added a tablespoon of creamy peanut butter (unsweetened!) and a little more Tamari (gluten free soy sauce) and it took it to great! Tasted far Thai to me this way. We gobbled it down. Delicious!
     
  4. This was fantastic. I used more noodles (about 10-12 oz) so I tripled the sauce. I used the fish sauce instead of the salt and I thought it made the recipe seem more authentic. I will definitely make this again sometime. Thanks for sharing!
     
  5. Oooooooooooooh (you didn't put enough O's in your title) this is good.. :) Loved It.. I used Egg Noodles instead of Rice- just cause' I was LAZY and didn't want to go to the store.. Came out GREAT! Next time I think I will use salt instead of fish sauce, the smell of that stuff is enough to make a drunk sober.. ;) Also added in two diced carrots.. YUM! YUM! YUM! Thanks for an easy, healthy, inexpensive meal.. :) Will for sure make again..
