- 500 g chicken breast fillets
- 14.79 ml oil
- 14.79 ml green curry paste
- 1 small red chile, seeded and finely chopped
- 3 shallots, finely chopped
- 150 g snow peas, sliced
- 1 lebanese cucumber, sliced
- 59.14 ml fresh coriander leaves, chopped
- 236.59 ml bean sprouts
- 1 small red capsicum, finely sliced

Dressing
- 1.23 ml grated lime rind
- 59.14 ml lime juice
- 4.92 ml grated fresh ginger
- 29.58 ml rice wine vinegar
- 14.79 ml sesame oil
- 29.58 ml peanut oil
- 9.85 ml fish sauce
directions
- Slice chicken fillet and stir fry in 1 tablespoon oil until cooked and then stir in curry paste.
- Cool.
- Dressing:- Combine all ingredients in screw top jar and shake well to combine.
- Combine chicken, chili, shallots, snow peas, cucumber, coriander, sprouts and capsicum in a bowl and toss to combine.
- Just before serving pour over dressing.
