Found on Epicurious, this was a wonderful and simple Cinco de Mayo dessert (though I am positive it would be smashing any time!). Fantastic on top of ice cream! Cook time is sitting time.
- 6 tablespoons triple sec
- 1⁄3 cup sugar
- 1⁄3 cup fresh lime juice
- 3 1⁄2 tablespoons tequila
- 2 tablespoons lime zest
- 5 cups quartered hulled strawberries
- Whisk first 5 ingredients in medium bowl to blend.
- Add strawberries; toss.
- Let stand at room temperature 1 hour or chill up to 4 hours.
Excellent on Vanilla Bean ice cream. For fullest flavor, it needs the sitting time so plan accordingly. It was still very good two days later as I made it for just the two of us so we had leftovers. I plan on trying a couple of salted pretzel twists or sticks next time as they seem an appropriate garnish.
