Blueberry Margarita

ingredients
- 6 ounces tequila
- 1⁄2 cup blueberries
- 8 ounces blueberry juice (concentrate)
- 4 ounces limeade (concentrate)
- 2 ounces blue curacao
- 3 cups ice
- 1⁄2 lime
- honey (to taste)
- salt
directions
- Place ice in blender and crush for 20 seconds.
- Add remaining ingredients.
- Blend until smooth.
- Use half lime to coat glass rims and then dip in salt.
- Pour into glasses and enjoy!

I wanted to love this, but it wasn't to be. I cut the recipe down to 1 serving and subbed triple sec for the blue curacao. I did like the drink, but there wasn't much blueberry flavor to it; I think part of the problem is there is too much ice and would recommend cutting back (one drink used 1 1/2 cups) to half the amount or less. I have a good blender and even then there was a lot of blueberry pith in the drink which wasn't pleasant in the mouth. It would be interesting to try this with blueberry juice ice cubes in place of the fruit and much of the ice. Made for the Comfort Cafe July 09.

So refreshing with wonderful blend of flavors. Goes great on this hot summer afternoon. I like my margaritas on the rocks, so that is how I made this one. My old blender had trouble getting all the frozen blueberries ground, but finally I had a beautiful cocktail. Thanks for sharing. Made for Spring Spectacular. :)
