- 3⁄4 cup flour
- 1 teaspoon baking powder
- 1⁄2 teaspoon salt
- black pepper
- 1 egg
- 1 (398 g) can cream-style corn
- oil (for frying)
directions
- Combine dry ingredients.
- Add beaten egg and sweetcorn. Mix to combine.
- Heat oil in frying pan. Drop tablespoons full of batter into pan. Cook until golden then flip.
- Drain on absorbent paper.

I just love this recipe & it's a keeper for me. I don't make it too often & usually find it's the first thing I make when we have no meat to have for a meal. I prefer using a tin of whole kernels for that real corn taste but the kids love the creamed corn like you have here. Either way, it's a popular recipe in our house. Economical, tasty & so easy to fry up that even the teenagers can make them.
