  • Sift flour, baking powder, salt and pepper to taste into a bowl.
  • Add egg, mixing to combine.
  • Stir in sweetcorn.
  • Heat oil in a frying pan.
  • Drop tablespoonsful of corn mixture into pan.
  • Cook until golden then turn and cook the other side.
  • Drain on absorbent paper.
  • Serve hot.

    Increase flour to one cup Add: - 1/2 to 1 can drained whole sweet corn - 1/2 tsp baking soda - pinch sugar Variations: - serve with maple syrup - add 1/4 tsp cumin and serve with salsa & sour cream Fun trick: To avoid frying, cook in takoyaki pan, mini waffle maker, or mini cupcake tin

    Had corn fritters when I was going up. I really like them. I had told my granddaughters about them. one spent the night with me and we made fritters this morning. My granddaughter really liked them. I used make them for my boys. I had forgotten the recipe, was glad I found yours. Will be looking at more of your recipes. Thanks for sharing, Alice Dozier
