Swedish Pancakes

- Sift dry ingredients together.
- Warm the milk and butter just until the butter has melted. .
- Add the eggs, then the dry ingredients.
- Lightly coat a crepe pan or nonstick frying pan with butter. This batter is thin, so I don't recommend a griddle, it will run all over!
- Pour a third of a cup into the hot pan, medium -high wait a minute or two until the edges curl, flip over, another minute and remove to a warm plate. Continue until the batter is gone.
- Serve with real maple syrup, Lingonberries, powdered sugar, whatever you like really! Enjoy!
- By the way, my amount of finished pancakes is only guesswork.

This are so very good. It did take me one try to get the flip right but once I did - oh man were these good. DH is already requesting again. I made only one small change in that I added 1 tsp of vanilla to the batter, it was a very loose batter but you'd said to expect that so I wasn't worried. I filled with some of my homemade mixed berry jam from home and sprinkled with course swedish pearl sugar. DH topped his with sour cream, but I liked them just like that. Now that I know how to make them - I'll be pulling this out whenever I want to impress. Thanks so much and I'd highly recommend anyone to try this one out. Made for the Newest Tag Game

I did a half recipe and the 3 of us gobbled them all up as a morning tea treat, we served them very simply with a squeeze of fresh lemon juice and a sprinkle of sugar rolled them up and ate, looking forward to making again and maybe filling with some fresh fruit and a little cream and roll up for a dessert. I have a Farmers Market stand where I sell breads and sweets. I am really enjouing my stand, as I get to make all kinds of breads, although the sweets are the big attraction! I am married to theworlds most wonderful man, have an aan amazingly brilliant child (of course I would say that!). In short, I am a verry happy, cheerful woman. Baking bread is my passion, but I love to cook anything. </p>
