    pammyowl's Note:

This is my Grandmas recipe. We would so look forward to Christmas morning when she would make these. There were 5 children and 8 adults, so she would truly have her job cut out for her! They are very thin and tender, we would always clamor for more, poor woman! No wonder she only made them once a year!

    Ingredients:

    Serves: 20

    Yield:

    pancakes

    Units: US | Metric

    Directions:

    1. 1
      Sift dry ingredients together.
    2. 2
Warm the milk and butter just until the butter has melted. .
    3. 3
Add the eggs, then the dry ingredients.
    4. 4
Lightly coat a crepe pan or nonstick frying pan with butter. This batter is thin, so I don't recommend a griddle, it will run all over!
    5. 5
Pour a third of a cup into the hot pan, medium -high wait a minute or two until the edges curl, flip over, another minute and remove to a warm plate. Continue until the batter is gone.
    6. 6
Serve with real maple syrup, Lingonberries, powdered sugar, whatever you like really! Enjoy!
    7. 7
By the way, my amount of finished pancakes is only guesswork.

This are so very good. It did take me one try to get the flip right but once I did - oh man were these good. DH is already requesting again. I made only one small change in that I added 1 tsp of vanilla to the batter, it was a very loose batter but you'd said to expect that so I wasn't worried. I filled with some of my homemade mixed berry jam from home and sprinkled with course swedish pearl sugar. DH topped his with sour cream, but I liked them just like that. Now that I know how to make them - I'll be pulling this out whenever I want to impress. Thanks so much and I'd highly recommend anyone to try this one out. Made for the Newest Tag Game

I scaled this down to 6 pancakes for DS and I. I did use some strawberry preserves, and topped each with some fresh cut strawberries, and some powdered sugar. Made for Best of 2013.

I did a half recipe and the 3 of us gobbled them all up as a morning tea treat, we served them very simply with a squeeze of fresh lemon juice and a sprinkle of sugar rolled them up and ate, looking forward to making again and maybe filling with some fresh fruit and a little cream and roll up for a dessert.
