Spinach Side Salad

- 170.09 g bag Baby Spinach, rinsed again and dried thoroughly
- 3 button mushrooms, wiped clean and sliced thinly
- 78.78 ml mozzarella cheese, freshly grated for best taste and texture
- 44.37 ml canola oil
- 44.37 ml seasoned rice vinegar
- 9.85 ml sugar (or 1 packet splenda...this is what I do)
- 1.23 ml salt
- 0.25 ml black pepper
- 1 egg, hard boiled, chopped (optional)
- 113.39 g bay shrimp (optional)
- 4 slice bacon, cooked crispy and crumbled (optional)
directions
- For the dressing-in a small bowl whisk the oil,vinegar,salt and pepper, and sugar or splenda all together until everything is disolved.
- In a large bowl place the spinach in then gently add the mushrooms and the mozerella.
- Give the dressing one last whisk and pour it over the salad.
- Gently toss the salad and plate them up.
- If using the optional ingredients neatly garnish the salads with them now.
- You can also add a bit of freshly ground black pepper.
- I try to chill my salad dishes before using them when I have the chance.

I am married and a SAHM of 4 kiddos...I have been a collector of recipes since I was a little girl. When browsing zaar I can not resist clicking on any recipe that is a 'family tradition', 'grandmas', or 'clipped from the paper 30 years ago' and anything that has the word 'lemon' in it. I am trying real hard to incorporate a healthier way of eating into our lives and zaar has been a tremendous tool in accomplishing that. I love trying lots of different recipes on zaar as well as just browsing. One of the things I love about it here is the ability to find first rate recipes that really make an impact on what I make for my family. I have found several recipes that are now becoming a 'tradition' in our home...and I really value them!
