Spicy One-Pot-Meal Turkey Chili

READY IN: 1hr 15mins
Recipe by Courtney Stinson

This is one of my original recipes. I love it because it uses few dishes and I find the chopping of the vegetables relieves stress after a long day of work. This is a great one dish meal. It's nutritionally balanced and so healthy for you. I really hope you enjoy it.

Simply Amazing! I made this dish twice now, each time I followed the recipe to the T, and it came out perfect. This dish is the perfect comfort food; it has all the comfort and warmth without all the fat that usually goes along with comfort food! This chili is a must try!

Directions

  1. Heat stock pot.
  2. Add canola oil and saute the onion and sweet potato until onions are soft.
  3. Add garlic and saute for another minute or two being careful not to burn it.
  4. Add turkey, chili powder, ground red pepper, ground black pepper, smoked paprika, cumin and salt. Cook until turkey is cooked through stirring occasionally.
  5. Dump in entire contents of canned goods. I like to rinse the cans with a little water and add that water to the pot.
  6. Add oregano.
  7. Simmer over medium heat.
  8. Add corn and continue to simmer soup until sweet potato is fully cooked.
  9. Serve and enjoy!
  10. * Excellent served with any of the following: low-fat shredded cheddar cheese, low-fat sour cream, tortilla chips (baked for less calories), and my favorite fresh cilantro.
