- 4 pork chops
- 29.58 ml flour
- 1.23 ml salt
- 1.23 ml black pepper
- 118.29 ml water or 118.29 ml dry white wine
- 78.78 ml oil or 78.78 ml shortening
- 29.58 ml butter
- 118.29 ml diced celery
- 118.29 ml diced onion
- 59.14 ml diced green pepper
- 453.59 g can stewed tomatoes, chopped with juice
- 1.23 ml oregano
- 1.23 ml thyme
- 2.46 ml cayenne pepper (more or less to your liking)
- 4.92 ml salt
- 14.79 ml brown sugar
- Spanish olives (optional)
directions
- Preheat oven to 350°F.
- Mix flour, salt and black pepper; dust chops.
- Brown chops in skillet; transfer to baking dish.
- Add water and cover; place in oven.
- Meanwhile prepare sauce: melt butter, cook celery, onions and green pepper until wilted. So not brown.
- Add tomatoes and seasoning. Cover and cook 10 minutes.
- Remove chops from oven. Pour sauce over chops.
- Return to oven and bake for 1 1/2 hour or until tender.
- Scrumptuous served with mashed potatoes and a nice green salad.
