- 1 1⁄2 - 2 lbs boneless skinless chicken thighs
- 1 onion, chopped
- 2 garlic cloves
- 2 jalapeno peppers, seeded and diced
- 3⁄4 teaspoon cumin
- 1⁄2 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon cilantro
- 4 small potatoes, diced
- 1 (19 ounce) can white kidney beans, rinsed and drained
- 1 cup frozen corn
- 1 3⁄4 cups chicken broth
- 1⁄4 cup tortilla chips, crushed
directions
- Cook chicken pieces in microwave or boiling water and drain.
- Dice chicken and place in large pot.
- Add everything else except the tortilla chips and kidney beans.
- Simmer until potatos are tender.
- Add kidney beans and tortilla chips and cook a few minutes more until beans are heated through and broth is thickened.

The dish was great, but a little bland. It reminded me of a white chili, but I probably should have added a few more seasonings as it was a little bland. (It could have been the jalapenos I bought were pretty mild...there really wasn't any spiciness to it at all.) I'd also recommend serving with with some tortilla shells (if you like a little crunch) and cheese and sour cream. It really makes it a rich and filling meal!
