  • In a small skillet, cook the beef, onion, green pepper, celery and garlic over medium heat until meat is no longer pink and vegetables are tender.
  • Drain off any juices.
  • Transfer to a 1 1/2 quart slow cooker.
  • Stir in the remaining ingredients.
  • Cover and cook on low for 8-10 hours.

This recipe says to use 16 oz of beans (a pound) in a 1 1/2 quart slow cooker but even though all the ingredients fit, it had too much beans in it and by 3 hours, all the liquid inside had consumed. It turned out too chunky. The chili tasted ok but I ended up taking beans out and added more water (adjust spices) so the chili did not dry out. So my tip is USE LESS BEANS, LIKE 8 OUNCES. Its just hard to find a decent 1 1/2 quart slow cooker recipe.

I made this recipe on 11/7/10 for the Crockpot/Rice Cooker Event in KK's forum.Due to the personal tastes of my SO and myself a few changes were made, they are as follows.Since we like a " meatier " chili a full pound of ground beef was used. While it was browning,I added the onion,some freeze -dried red/green pepper flakes. Garlic powder with some celery powder were also added while the beef was browning.After mixing everything in the crockpot, it was tasted to see, if any additional seasoning were needed. I felt it was missing something, so I added a bit of Recipe#38719. My SO thought it was just fine, but to me something was still missing. Thanks for taking the time to post this recipe and, " Keep Smiling :) "

  1. I just made this awesome recipe! Great for 2 people! I have not yet learned how to use slow-cooker without losing the flavor so I cooked it on the stove. Because I like my chili spicy, I used McCormick Hot Spicy Mexican Chili Powder in place of chili powder, Rotel Hot Diced Tomatoes with Habaneros and Meijer Brand Red Peppercorns to knock out the sweet taste from the ketchup. Forgetting to pick up some celery from the grocery store, I used McCormick celery salt.
