- 2 tablespoons oil
- 1⁄2 cup onion, diced
- 2 garlic cloves, minced
- 1 teaspoon cumin powder
- 1 tablespoon sugar
- 1⁄4 teaspoon ground ginger
- 1⁄8 teaspoon cayenne pepper
- 1⁄2 cup mushroom, sliced
- 1 (14 ounce) can diced tomatoes with green chilies
- 1 tablespoon tomato paste
- 1 tablespoon fresh parsley
- 1 tablespoon fresh basil
- 1⁄4 cup white wine
- 1 lb shrimp, peeled and deveined
- 1 lb bow tie pasta, cooked
- salt and pepper
directions
- .saute onions, garlic, and mushrooms in oil.add wine.
- add everything but shrimp and pasta, allow to simmer about 1/2 hour. add shrimp cook til shrimp are pink.
- serve over pasta.
- *my husband likes mexi blend cheese topped on pasta.I like parmesan cheese.
- ** I always double the recipe, take the left over sauce( no shrimp) and freeze for next week. I take it out of the freezer the day before to thaw. when ready for dinner bring to a hot simmer add another 1 lb of shrimp, cook til done and put over pasta. taste even better the second time around.
