- 2 (20 ounce) packages Simply Potatoes Diced Potatoes with Onion
- 2 tablespoons chopped cilantro
- 1 medium bell pepper, diced
- 4 stalks green onions, chopped
- 2 tablespoons sour cream
- 2 tablespoons verde salsa

For the Shrimp
- 24 ounces small peeled frozen shrimp
- 2 tablespoons butter
- 2 limes, juice of

For the cheese sauce
- 2 tablespoons butter
- 2 tablespoons flour
- 1 cup milk
- 2 ounces habanero monterey jack cheese, grated
- 2 ounces gruyere cheese, grated
directions
- Begin cooking the potatoes in a 12 inch skillet with a little oil in the bottom of the pan. Cover and let cook, stirring occasionally until the potatoes are starting to brown, about 12 minutes.
- In another skillet, melt the butter and combine with lime juice. Stir in the frozen shrimp and cover until shrimp is thawed, about 5 minutes.
- In a sauce pan combine milk, flour, and butter and heat on medium until the sauce begins to thicken. Remove from heat and quickly whisk the grated cheese into the sauce.
- Layer the potatoes, shrimp, and sauce with the remaining ingredients into two bowls and enjoy!
