- 1 large onion, chopped
- 14.79 ml olive oil
- 2 (822.13 g) can reduced-sodium chicken broth
- 2 (566.99 g) can diced tomatoes and green chilies, undrained
- 473.18 ml frozen corn
- 425.24 g can black beans, rinsed and drained
- 411.06 g can diced tomatoes, undrained
- 22.18 ml chili powder
- 4.92 ml sugar
- 453.59 g uncooked medium shrimp, peeled and deveined
- 59.14 ml minced fresh parsley
directions
- In a Dutch oven, saute onion in oil for 3-4 minutes or until tender.
- Add the broth, tomatoes and green chilies, corn, black beans, tomatoes, chili powder, sugar and salt.
- Bring to a boil, stirring occasionally. Reduce heat; cover and simmer for 20 minutes.
- Stir in shrimp; cook 5-6 minutes longer or until shrimp turn pink. Stir in parsley.
